1-1/2 pounds lean ground beef
1 large white onion, diced
1 large green bell pepper, diced
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
2 teaspoons dry mustard
1 teaspoon garlic salt

Beef Fillet with Gorgonzola Sauce

Ingredients
FOR THE BEEF:
1 (6 lb) beef tenderloin, trimmed of fat
1/2 cup apple cider vinegar
2 tablespoons sea salt
2 tablespoons black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
6 tablespoons Worcestershire sauce
3 tablespoons coarse grained Dijon mustard
1/2 cup unsalted butter, melted

FOR THE GORGONZOLA SAUCE:
2 cups heavy cream
2 ounces crumbly gorgonzola, diced (NOT “dolce”)
2 tablespoons parmesan cheese
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons fresh parsley, minced


Instructions
Use paper towels to thoroughly wipe down the tenderloin with the cider vinegar.
Combine the salt, pepper, garlic powder, onion powder, Worcestershire sauce & mustard.
Spread this spice paste over the tenderloin, coating the whole exterior.
Place on a broiler pan and drizzle half of the melted butter over the tenderloin. Broil for 5 minutes. Turn tenderloin over to other side & drizzle with the remaining butter. Broil for another 5 minutes.
NOTE – BEGIN MAKING SAUCE NOW, SEE INSTRUCTIONS BELOW.
Set the oven to 350 degrees and bake the tenderloin at this temperature for 45 minutes.
Remove from the oven and let sit for 10 minutes before slicing. Serve with Gorgonzola Sauce.

GORGONZOLA SAUCE:.
Bring the cream to a full boil in a medium saucepan over medium-high heat, then continue to simmer rapidly for 35 to 40 minutes, until it’s thickened like a white sauce, stirring occasionally.

Remove the pan from the heat & add the gorgonzola, parmesan, salt pepper. Whisk rapidly until the cheeses melt, add parsley, and serve.

Chocolate Lava Cake

Ingredients
1 box chocolate cake mix
1 1/4 C milk
1/2 C vegetable or canola oil
3 eggs
1 (3.9 ounce) instant chocolate pudding
2 C milk (I used 1 %)
1 (12 ounce) bag milk chocolate chips
parchment paper

Instructions
Grab a 3-4 quart crock pot and line it with parchment paper. Spray the inside of the paper with cooking spray. The parchment paper helps the cake cook without burning along the edges. You can make it without the paper, just be sure to watch it closely.

Find yourself a nice chocolate cake mix and pour it into your stand mixer or medium-sized mixing bowl.

Add 1 1/4 cup milk, 1/2 cup oil and 3 eggs. Beat on low-speed for 1 minutes. Scrape the bottom of the bowl and beat on medium speed for 2-3 minutes or until the batter in nice and glossy.

Pour the batter into the lined crock pot.

Pour one small box of chocolate pudding into your stand mixer or medium-sized mixing bowl. Add 2 cups cold milk and beat it until the pudding thickens. Should take about 3-4 minutes.

Pour the pudding over the top of the cake batter. Don’t stir it. Really, cross my heart and hope to die. It will cook up best if you leave the layers be.

Grab a bag of milk chocolate chips and pour the pretty little things all over the top of the pudding. Again, please do not stir it.

Cover the crock and cook on low for 2 1/2 hours, or until the top of the cake is set.

Place some on a plate and add a cool scoop of ice cream or whipped cream right on top.
